It wasn’t until the late 12th century that Zen Buddhist monks, most notably Eisai, brought tea seeds and powdered tea methods back to Japan, where the practice would evolve into something uniquely Japanese. Eisai, who later wrote Japan’s first tea treatise, promoted matcha’s cultivation and health benefits, linking it to Zen meditation—a connection that remains central to matcha’s identity today.

By the 16th century, tea masters like Sen no Rikyū refined powdered tea into chanoyu, the Japanese tea ceremony, which centers on harmony, respect, purity, and tranquility. Koicha, on the other hand, is a richer, more intense version used for special occasions. It uses 3–4 scoops of matcha with less water, kneaded gently (not whisked) to create a thick, glossy texture. It’s often served with wagashi (Japanese confections), whose sweetness balances matcha’s subtle bitterness.

Modern Matcha: Lattes, Desserts, and Beyond

While ceremonial matcha remains a beloved tradition, modern culture has embraced matcha in countless creative ways. Matcha lattes—made with steamed milk and a touch of honey or sugar—are a global favorite, offering a creamy, milder alternative to straight matcha. It’s also used in desserts like ice cream, cakes, mochi, and even savory dishes, though these often use culinary-grade matcha (a slightly lower grade than ceremonial, made from older leaves). Just be wary of “matcha” products that use artificial coloring—authentic matcha gets its green color naturally from chlorophyll.

The Health Benefits: More Than Just a Trend

Matcha’s popularity isn’t just about flavor or aesthetics—it’s also packed with health benefits. Because you consume the entire tea leaf, it delivers a concentrated dose of antioxidants, including EGCG (epigallocatechin gallate), a potent catechin linked to numerous health benefits. Other top regions include Nishio in Aichi (known for culinary-grade matcha), Shizuoka (Japan’s largest tea-producing prefecture), and Kagoshima (where volcanic soil gives matcha a rich flavor).

When shopping for matcha, look for labels that specify “ceremonial grade” or “culinary grade,” and check the origin—matcha from Japan is held to stricter standards than matcha produced elsewhere. Avoid powders that are dull green or have a bitter, burnt taste, as these are likely low-quality or improperly processed.
